Philippe Conticini
Renowned pastry chef Philippe Conticini has given a twist to a traditional French pastry, the Paris-Brest, made from choux pastry topped with praline cream and sprinkled with flaked almonds.
He has brought it up to date by adding a pure praline insert and slightly altering its shape, while nonetheless retaining the form of a bicycle wheel reminding us of its early 20th century origins.
